We visited Carbon restaurant in Madrid. The place is very stylishly designed, with lighting that creates an intimate atmosphere. The tables are beautifully arranged, and the restaurant is divided into three areas: a central bar, tables around it, and a second floor. Initially, there was a bit of confusion with our table, but eventually we were seated in the main downstairs area. Communication with the waitress was somewhat difficult as her English was limited, which is common in Spain. The food was very tasty, although one friend’s meat dish was relatively fatty. I believe this is one the best restaurant in Madrid. They are really proud with the name and it does represents the food and very well cooked and special! Juan and Leo made our Valentine lunch soo special! They give personalised recommendation and very knowledgeable. Must try food : - Pimientos a la brasa - solomillo -txistora is amazing - the steak tartare is good - alchacofas a la brasa And their spanish wine pairing is amazing ( Conde d San Cristobal). This is one of the very smooth Spanish wine, doesnt taste liquerish. Overall, I will come back to this restaurant!

I have not written a review for a while but because there was such gap between people reviews and our experience, I decided to share it. We were a group of four and the four of us were really not impressed. We shared a few starters: the grilled aubergines and the croquetas were single but good. The mini hamburgers were appalling, simply the bread, the meat, a bit of chopped gherkins and mayo on the side, nothing else, no tomato, no salad, no cheese. The side of fries were thin, no crunch, and small in quantity. We had one main dish each: two fideuá de gamba (noodles with prawns), one entrecot
