He paired the appropriate local wine with each meal.the baccala was melt in your mouth and the cardero(lamb) was also divine. What made the evening extraordinary was the attentiveness of the waiter. Furthermore, a table across from us ordered a paella which looked delicious and they seemed to have enjoyed it. Definitely a recommended for authenticity and great service from Pancho.
