[Late review] Visited in Aug 2025 My whole trip to Taichung last year was built around my visit to JL Studio. As a restaurant which has 3 Michelin stars and constantly features in Asia Top 50 restaurants list for the last few years, visiting JL Studio was a bucket list item for me which I was able to tick off. As a Singaporean, there was an added incentive to visit this restaurant as the head chef is a Singaporean and the tasting menu here is built around various flavour profiles found in Singaporean cuisine/food. The tasting menu comprised 8-10 courses (depending on how you count the smaller bite sized courses). The menu is so well thought out in terms of ingredients, flavour profiles and progression of courses. The plating of the courses was excellent, as would be expected of a 3 star establishment. As a Singaporean, I highly recommend this place. While not every dish is “uniquely Singapore”, I understand that this is in Taiwan. Produce is different and some south east asian herbs and spices are not as good. The most impressive dish to me was Chef’s take on roti prata and curry fish. This dish somehow comes across as extremely balanced, and all the spices and what I expect from a curry fish came to me. I had a similar chilli crab ice cream at another Michelin restaurant but it just felt off. Overall, I would think that the best praise for this restaurant is that I really enjoyed my meal and I was really immersed in the dining experience. Many times when I eat out, I subconsciously think, I would add this, I would do that, why is this not done that way etc. And I don’t go around eating expecting to think so much. JL studio got me enjoying every bite. Ambience was 4 stars because I think it lacked Singapore elements BUT the team told me that they’re shifting elsewhere very soon.

The food was delightful! Most dishes had us smiling and going wow. Highly recommend it if you are in taiwan. If you are familiar with singapore / malaysia food - it's a huge bonus to be able to appreciate the elevation of such familiar flavors. My favourites were the interpretations of roti prata, white laksa, oyster omlette, nasi lemak as a dessert!! We had requested a no beef menu and the replacement pork loin served was superb. Lots of Taiwanese ingredients at play on the whole menu but those subtleties were lost on us :) Service was good, ambiance ok. Go for the food, that's fantastic.

Appetizers are 10/10. Very impressive. Especially the hamachi and the oysters served in an egg. These two dishes are out of the world. However all the main dishes are lacking creativity and the flavors don’t really hit me. Deserts are just okay. Wine pairing is also just okay.
