Taco Libre in Minneapolis was a perfect find, great location for where we were staying and even better food. We went with the three taco birria meal with chips and salsa, and it absolutely delivered. The tacos were loaded with melty, delicious cheese, and the meat was super tender and cooked just right. Add in the fresh lime, cilantro, and onion, and it all came together perfectly. Now let’s talk sauces...because they deserve their own moment. We tried a few (okay, maybe more than a few), and the hot green sauce was the clear winner. I went there twice. The tag team taco and street tacos were amazing and the sauces and cucumber/onion topping is delicious. The machete looks like it would feed me for a couple days. All the prices are very reasonable. First trip was a five. The second day wasn't as good(still delicious). They were super busy and hustling out orders as fast as they could so they get a pass on that.

We got birria, carnitas, and pastor tacos. The meats in all three were dry and under-seasoned. I know that street style carnitas should have some crispness, but this was the type of dryness that tastes stale rather than crisped. The corn tortillas were also dry at the edges and falling apart. The birria meat was also dry. The consommé tasted like barely seasoned beef fat mixed with water. The onions on the tacos tasted bitter, which I take as an indication that it was not prepared that day. Visiting from Indiana, this place definitely exceeded my expectations. The food here is authentic Mexican food. The taste was incredible and they have so many varieties of dishes and meats. They have plenty of seats. The decoration is a modern Mexican culture. I highly recommend.
