Who would have thought Midland TX would boast a SUPERB French fusion style restaurant?! Downtown location is convenient, with an interesting set-up adjoining a nice bank building lobby. Staff are super-friendly, there's a very stylish bar, and most importantly of course the cuisine is first-rate and shows great care in selection and preparation. Salmon on my delicious bibb lettuce and blue cheese salad was poached and blackened to delicate perfection ... not too much, JUST RIGHT! Tomato basil bisque with cheesy toast on the side was sinfully delicious comfort food. This will be a MUST stop on

From start to finish, this was one of the best experiences we have ever had. The oysters are insanely good. The French onion soup was even a better touch and both steaks that we are having are truly epic. I personally want to thank Raymundo and Karina For their exceptional service and their lovely attitude. This has been an absolutely wonderful evening.

Very very good! Loved the staff! The bartender was there from open to close and they were just amazing! I wish I would've gotten they're name but super nice! We ended up getting breakfast 10/10 and dinner and the same bartender was there and just as nice!

Had such a lovely time at Saint Blaise, totally worth the wait. Our server was the sweetest, the tomato soup was top tier, perfect for the cold weather that’s approaching!! The food is very fair priced and every bite was delicious! i also had the pistachio martini, they even added a shot of espresso to mine since i couldn’t choose between the pistachio or espresso martini, they said why not both! I will say best martini i’ve ever had, i raved about it for days! The atmosphere, food and crew simply just 10/10. I can’t wait to go back and try more of the menu!!
