Very odd working hours, if you want proper food, you need to come between 12:00–14:00 or 18:00–22:00. We arrived at 15:00 and could only get some salami, cheese, and bread, which was a bit disappointing. That said, the overall experience was still good. They have a solid beer selection, and the staff were friendly and helpful, which made the visit enjoyable despite the limited food options.

Delicious meal and kind staff. If you are looking for a cosy place to eat or just go for snacks in Brugge, this is it. We didn’t need a reservation on a thursday night. So i am not sure for the weekend. The prices are good comparing to touristic restaurants in Grotemarkt. (55 euros for two dishes, cheese and two chardonnays)

Food was great, and to be fair the restaurant itself is in a lovely location with really nice decor. On paper, De Republiek should be a brilliant spot in Bruges. Sadly, the experience was let down badly by the service and some fairly odd policies. We were a pre-booked group of 11 and, once seated, were told we could only choose from four main courses — and that everyone had to have one of those options. After some discussion, they eventually backed down and allowed us to order what we wanted, but the whole thing made very little sense. Three separate tables of four would presumably not be re
