The mayonnaise stood out for its exceptionally smooth texture, while the pesto accompanying the razor clams elevated their natural taste beautifully. As someone coming from Galicia, where seafood is of exceptional quality, I must say the flavor of the razor clams was quite good — though slightly overcooked for my taste, resulting in a drier texture.
