Geronimo C Ramos★★★★The tonkotsu shio looks simple when it lands. Then you take a sip and the broth hits different. Creamy, layered, real depth. Pork was tender, noodles had the right chew, egg was cooked perfectly, and the mushrooms added a nice crunch in there. Hot chicken bun was solid too. Chicken stayed crispy, spice level was on point, aioli tied it all together. Service was great on top of that. I was sitting out in the middle of The Factory food hall and the server still tracked me down to deliver my bowl. I’m from California so I’ll be honest, I wasn’t expecting much from ramen in Franklin Tennessee. T
