Chinesology HK has truly raised the bar for Cantonese fine dining. Chef Saito Zhou and his team continue to impress with their creativity, precision, and attention to detail. We experienced the Black Pearl Premium Menu, which begins with delicately prepared Drunken Shrimp in 20-Year Huadiao and a trio of Baked Preserved Ham in Puff Pastry, Deep-Fried Spring Roll Stuffed with Sea Cucumber, and Roasted Wagyu Beef with 20-Year Tangerine Peel, Honey, and Peanut. Dishes like Sliced Geoduck in Superior Chicken Broth and Braised South Africa Premium Dried Abalone with Goose Web showcased rich umami flavors, while the Homemade Sorbet provided a refreshing palate cleanser. The menu continued with Stir-Fried Lobster in Sergestid Shrimp Sauce, Crispy Chicken with Shrimp Paste and Seasonal Vegetables, and Sichuan-Style Homemade Wonton and Fish Maw. Desserts, including Stewed Pink Guava with Pomelo and Bird’s Nest, were elegant and satisfying. Every dish demonstrates a perfect balance of flavor,

Chinesology is housed within a mall complex, which sounds like a compromise until you walk through the long, elaborately designed entry passage — a deliberate transition that effectively separates the restaurant from everything outside it. By the time you’re seated, the surroundings feel entirely their own. The view over Victoria Harbour and Kowloon does the rest. It’s the kind of backdrop that would carry a mediocre meal, but the food here needs no such help. We went with the vegetarian set menu, which was outstanding across the board. The stewed soybean meat wrapped in lettuce was a particular highlight — textured, flavorful, and surprisingly satisfying. The sweet and sour crispy bean curd glazed with secret vinegar was exceptional: a precise balance of acidity and crunch that lingered well beyond the last bite. The service throughout was professional and well-timed without ever feeling intrusive. A genuinely special restaurant that earns its place in the view it sits in front of.

*Still a Favorite After Three Visits!* ⭐️⭐️⭐️⭐️⭐️ This was my third time dining here, and I still really enjoy it! The smoked chicken remains a standout—so flavorful and tender. This time, I focused more on their dim sum selection, and I could genuinely taste the care and attention they put into each dish. Some people have called this a “Western-style” Chinese restaurant, but I completely disagree. Just take a look at the photos—the presentation is more refined, yes, but the flavors are authentic and true to traditional Chinese cuisine. We booked a private room this time, which was a great decision. The main dining area can get quite lively, so having a quieter space made it much easier to enjoy the meal and conversation. For reference, the private room (suitable for 8–10 people) is priced at HK$6000 + 10% service charge, which I think is reasonable for the IFC location. Looking forward to coming back again!

Well-situated in the bustling heart of Central, IFC, 𝐂𝐡𝐢𝐧𝐞𝐬𝐨𝐥𝐨𝐠𝐲 is renowned for its culinary philosophy of redefining Chinese cuisines with Western cooking techniques. To impress all diners, Chinesology will be collaborating with 𝐇𝐄𝐋𝐈𝐎𝐒𝐒𝐘 for a limited time, presenting the 𝐂𝐡𝐢𝐧𝐞𝐬𝐨𝐥𝐨𝐠𝐲 𝐱 𝐇𝐄𝐋𝐈𝐎𝐒𝐒𝐘 “𝐖𝐡𝐢𝐬𝐤𝐲 𝐨𝐟 𝐭𝐡𝐞 𝐆𝐨𝐝𝐬” 𝐌𝐞𝐧𝐮, featuring 11 exquisitely curated dishes paired with HELIOSSY whisky.

Booked this restaurant for brunch. It is my brother’s birthday and I asked if they would have anything special for the celebration. The reception whatsapped saying that we had to pay $168 for four longevity buns and they will write some celebrating words on the dessert plate. I pointed out that the buns were in fact included in the brunch menu and why they charged extra. They then said they can offer a light board for free but insisted that they won’t write anything on the plate for the buns unless I paid $168. I asked for a return call from the manager but she was too arrogant to call back. The mandarin speaking receptionist Chloe called and confirmed that the longevity buns in the a la carte and brunch menus are the same but the writing involved an extra cost to the restaurant which is $168. Upon rounds of debates and request, the manager Zita finally called at 9:00pm and said she could do the birthday greeting writings for us but I was too tired and lost the mood of going there any

The restaurant’s interiors are tastefully designed, with expansive floor-to-ceiling windows framing a captivating sea view. The seating offers excellent privacy, making it an ideal setting for a relaxed yet refined Cantonese dinner among friends. **Chilled Jumbo Razor Clam With Thai Basil And Cumin** An elegant cold starter showcasing razor clam at its best—fresh, snappy, and subtly briny. The pairing with Thai basil and cumin introduces a refreshing herbal lift and a whisper of spice, enhancing the clam’s natural sweetness without overwhelming it. **Appetiser Trio: Pickled Radish • Chilled Jellyfish • Braised Goose Wing** The pickled radish is bright and crisp, cutting through the palate with a gentle acidity. The chilled jellyfish, paired with strands of vegetables and roe, offers a cool, crunchy contrast. The braised goose wing is richly marinated, with a deep, savoury aroma and a touch of heat that brings warmth to the trio. **Minced Silkie Chicken Thick Soup With Gum Tragacanth
