It was a great kaiseki experience. The food presentation and the tableware were incredibly beautiful and detailed, and you could really tell how much thought and care went into every dish. The dishes themselves were unique and not something you come across often, which made the experience interesting and fun. That said, in terms of flavor, it did not quite meet my personal expectations, so that part was a bit disappointing. As someone who truly loves sushi, the sushi and sashimi were not my favorites, including the sushi rice. The okoge ankake was my least favorite dish. However, my friends really enjoyed the meal, and we still had a lovely dinner together. The service was excellent, and overall, it was a very good experience.

Absolutely fantastic upscale Japanese food. It's a nice mix of sushi, Wagyu beef, and other traditional Japanese cuisine. Every dish was superbly executed and just delicious. The portions are plenty and they did a wonderful job accommodating my partner's dietary restrictions. Make reservations well in advance and don't be late!

wa'z Seattle is a great place to experience Kaiseki with a distinct chef's touch. The flavor profile here is simple and direct, allowing diners to intuitively enjoy the taste. Even with minimal experience with Kaiseki, you will likely appreciate the food here. It is also a very enjoyable experience to watch the chefs prepare and serve the dishes right from the open kitchen counter. However, the service leaves room for improvement. Our server forgot a few requests, and the slow start - we didn't get served any dish until about 20-25 minutes after being seated, for a couple of times of my visits. Also, personally I didn't quite enjoy their sushi (rice and rice seasoning more specifically) Overall, while the culinary execution is approachable(not the price) and high-quality, the slow start and service hiccups distracted from what could have been a flawless experience.

The food has high quality, thoughtful craftsmanship, and all the details that make the experience special. This is also a Japanese restaurant actually operated by a Japanese chef, not by Chinese, Korean, or other ethnicities. There’s nothing wrong with the latter, but it can make the experience feel less authentic. We paid $300 per person including sake pairings, tax, and tip, which is definitely not cheap and not really worth it compared to what you can get in Asia (or Vancouver or NYC). But we accept that this is a general Seattle problem. While the service had some hiccups and definitely lacked the small customer-focused details you’d expect in fine dining and in Japanese culture, I also want to recognize that it’s a small restaurant with a limited number of staff. Everyone worked really hard, was clearly busy, and genuinely cared, so it still feels good to support them. It was beautiful inside, the staff were so informative and engaging, I loved hearing them describe each dish on the pre-fix menu. Each dish was delicious in its own right, and you could tell they enjoyed their work and did it well.
