Wow, wow, WOW. I’m writing this while still sitting here mid-meal. This place is FANTASTIC. I already can’t wait to come back. Everything has been incredible. For starters, we had the ceviche de chicharrón — the whole reason we came, since my wife was craving chicharrón. Man, oh man… it was scrumptious. The chicharrón paired with the guac was impeccable. Absolutely incredible experience. Hands down the best and most authentic Colombian food I’ve had. The chicken was insanely flavorful and perfectly cooked, the skirt steak was tender and seasoned to perfection, and the rice with pork-infused beans was out of this world—rich, comforting, and packed with flavor. The drinks were next-level, easily some of the best I’ve had anywhere. On top of that, the decor genuinely made me feel like I was back in Colombia. Came here today for the fourth time and realized I never gave wrote it a proper review. I got my usual order, bandeja paisa. It was delicious as always. The texture and flavor of the rice was amazing! I never eat the beans at other spots—I find most too watery compared to how I grew up eating beans, but La Chiva does a great job! I forgot order the skirt instead of the normal steak that comes with it, but it was still delicious. The staff was also extremely attentive and did a great job and their service was impeccable. Definitely give this a try!
