The foie gras was incredibly creative and a pleasant surprise. I never would have imagined pairing foie gras with apple, but it worked beautifully. The foie gras was silky smooth and melted in my mouth, while the apple added just the right amount of freshness to cut through the richness. The beef tartare was seasoned with a blend of ingredients I couldn’t identify, creating a unique, well-balanced flavor that was both complex and delicious. The duck confit risotto was rich with stock, creamy, and packed with savory flavor.

I have been to many good restaurants in my life, been to many different countries and have experienced many different cuisines. Rarely do I say that a restaurant is perfect, but WOW this experience was perfect. EVERYTHING was thoughtful and intentional: the flavor profiles were fresh and funky, the staff were kind and considerate, the music and interior were eclectic and the wine was spot on. If you can only visit one restaurant in Quebec city, I would definitely reccomend this one.
