When we visited Pais in Feb 2026, the place was named Cafe Calliou. It was a short walk from our hotel. It's a small, intimate space, but quite busy with lots of foot traffic. We were welcomed and treated very well. We ate here on two occasions for dinner. Both times we ate inside. We had the French onion soup which was rich and full of flavor. We had one of the best French dining experiences of our lives at Cafe Caillow in Paris. This place deserves not 5 stars, but 6 or even 7. Everything we tried was exceptional - the oysters, escargots, foie gras, and tartare. Every dish was incredibly fresh, full of flavor, and perfectly prepared.
