Canova is a hidden gem in Toulon. A French chef with an Asian twist took us on a journey: melon kimchi with cuttlefish, eggplant reinvented in babaganoush style, and a Taiwanese beef noodle carpaccio with orange zest that blew us away.

Worst food I had in Toulon. Starter (some type of hummus and another spread) with bread was ABSOLUTELY AMAZING, and all the other plats got progressively worse. I was there on Wed, Sept 3; and after dinner the chef mentioned they had just created a new menu for the season. Everything except the appetizer and desserts needed improvement. We ordered all the seafood dishes: 1) the clams were EXTREMELY salty, and out of the 30 we had in our bowl only 21 were actually open to eat - very salty. 2) the scallops dish (that may have had coconut milk in it and some green accent) was decent, but fla

An explosion of tastes based on creativity. Not to brag much, I live in New York City, I have some very competitive and yet new cuisine in the past 2.5 decades… here at Canova, chef Francesco, an innovative chef, or an artist rather, created some dishes that I would remember for a very very long time. Plus, the vibe was all so chill and casual… that dug me at this stage of my life and I truly highly recommend your dinning at Canova ⭐️ x 6

Such a nice experience at Canova! All the dishes were super tasty well balanced with nice presentation. Good price for the wines as well. Chef is very knowledgeable about local and international ingredients. Bravo!
