I feel really bad having to rate it like this, because the staff was nothing but absolutely lovely, helpful and attentive. Overall, the dishes are innovative, but they are failing to actually be a good combination of that innovation and overall taste. Surprisingly, even the meat cuts were chewy, and the fact that they were covered by the sauce made it difficult to spot so we found it while chewing. Not a nice experience. I would not like to sound too harsh, but all that combined with the price, doesn’t make the cut. The idea is good, but I believe there is a lot of work to be done yet!

I visited Insolent for the first time last week and was thoroughly impressed. The staff is absolutely amazing and has extensive knowledge of the wines. We followed Javi's recommendations, and the food was incredible. They treat their products with great care, and the chefs are very professional. The dishes were exceptionally good. I would recommend this restaurant to everyone. The prices are also very reasonable.
