This place is the real deal. Fabio, the owner, is truly Italian — from Northern Italy — and you can taste that authenticity in every bite. It’s very much a hole-in-the-wall setup: you order at the counter, pay, and then Fabio personally brings your food to one of the small tables set up outside. The whole experience is minimal, efficient, and completely focused on quality. As an Italian born and raised in Italy, I find it very hard to eat pasta outside of Italy without being disappointed — but this place is a true testament to how it should be done. Fabios is an extremely easy to miss hole-in-the-wall serving outstanding fresh pasta! We ordered the fettucine with truffle sauce and mushrooms and the spaghetti carbonara. The fettuccine had amazing texture and a great chew. The truffle sauce had a great creamy texture that clung to the noodles without being too rich or only tasting of cream. The carbonara looked and tasted great, but was surprisingly a bit too egg forward. My wife and I personally prefer a bit more guanciale grease and parmesan in the sauce to add some smokiness and sharpness to balance out the eggy richness, but it was sti
