Ordering mackerel with soy sauce and garlic oil would put me off anywhere else. But this is France, and I trusted the chef. With good reason, as the fish emerged perfectly cooked, with the sauce at just the right intensity to work with, not overpower, not be overpowered by the fish. Any other fish wouldn't work.
