I share three memorable dishes: Carpaccio of mullet: fish sliced paper-thin, marinated in a sauce of tomato, lemon, nut oil, and miso, topped with fish eggs. Galette estofinade: a little cake of potato, smoked cod, and trout, topped with caviar and surrounded by fish-stock foam. Pavé de maigre roti: a thick-cut steak of baked corvina fish, topped with a brown fish-bone reduction sauce.
