The sauce is fresh and uncooked with just a touch of salt, nice balance of acidity and sweetness. Fresh mozzarella is creamy and rich, and the basil adds a subtle floral note. The dough is well fermented, light, and flavorful. Solid, well-executed pie. The garlic bread with Boursin and mozzarella was excellent, crispy, garlicky, and properly seasoned.
