We had lunch today at this lovely pinsa (Roman-style dough) restaurant in the center of Arles, and we absolutely loved it! We ordered two different pinsas to share — both were phenomenal. The Carbonara was made with mascarpone, Parmigiano, real guanciale, and a silky yolk sauce — rich, balanced, and full of flavor. The Prosciutto pinsa came with top-quality ham, mushrooms, tomato, Parmesan, and fresh arugula. Both were outstanding — probably some of the best pizzas we’ve ever had. This was, hands down, the best pizza I’ve ever eaten. The crust managed to be beautifully crispy and soft and doughy at the same time and the flavours of the topping (I ordered anchovy) were rich and salty and delicious. Service was friendly, welcoming and attentive. Wonderful!

Delicious pinza (thin crust pizza) professionally served with a view of the Roman arena. We really enjoyed our pinza (I love anchois and they loaded them on with olives and big fat capers) and side salads. Good wine selection, happy staff. You will be pleased. PS … OK to use your hands :-)
