Lovely concept, pull veggies, mushrooms, noodles, and proteins from a buffet to be prepared in a spicy sauce. I went with the level 2 spice level and stir fried a bowl of shaved beef, cabbage, and quail eggs with ramen noodles. It was absolutely delicious 10/10 recommendation.

I’ve been to Ajishin over 200 times (yes, Google actually tracks it), and as someone who’s half Japanese, it’s by far my favorite udon spot. The food is incredibly authentic and really captures the taste of Japan -- but what stands out most is the consistency. You can order the same dish 20 times and it will taste exactly the same every single time. That reliability is outstanding. I’ve tried almost everything on the menu. The Ajishin Udon is the signature dish and definitely the best value, but the other udons are excellent too, all with that subtle, traditional depth in the broth. The mixed

This place is the gem of Novi. It doesn’t get any cheaper than this too. Unfortunate that you can’t sit in anymore and wish they were open for more hours, but staff are very sweet. If you love nigiri the salmon is incredible for $2. Udon is homey and just feels right.
